These no-bake energy bites combine naturally sweet apricots with bright citrus and a hint of coconut for a fresh, vibrant flavor. Soft, slightly chewy, and nutrient-dense, they’re perfect as a quick snack, light dessert, or make-ahead treat. With simple whole-food ingredients, they come together quickly and store well for the week.
Ingredients
Base:
• 200 g dried apricots
• 120 g rolled oats
• 100 g almonds or cashews
• 3 tbsp unsweetened shredded coconut, plus extra for coating
• 1 tbsp chia seeds or ground flaxseed
• a pinch of salt
• 2 tbsp fresh orange juice
• 1 tsp finely grated orange zest
• 1 tsp vanilla extract
Optional:
• 1–2 tbsp water (only if needed)
Optional Garnish:
• Extra orange zest
• Finely chopped pistachios
• Extra shredded coconut
Preparation
Step 1 - Soften Apricots (if needed)
If the dried apricots are firm, soak them in hot water for 5–10 minutes, then drain well.
Step 2 - Blend Dry Ingredients
Place the oats, nuts, coconut, chia seeds (or flaxseed), and salt in a food processor. Pulse until finely chopped.
Step 3 - Add Flavourings
Add the apricots, orange juice, orange zest, and vanilla extract. Blend until the mixture comes together and becomes slightly sticky.
Step 4 - Adjust Texture
If the mixture feels too dry, add 1 tablespoon of water and pulse again. Add more only if needed.
Step 5 - Shape
Roll the mixture into 18–20 small balls.
Step 6 - Coat
Roll each bite in shredded coconut.
Step 7 - Chill
Place in the fridge for about 20 minutes to firm up.
Step 8 - Finish
For a decorative touch, top with a little orange zest or chopped pistachios before serving.
Step 9 - Serve
Serve chilled as a snack, light dessert, or elegant no-bake treat.
Storage: Store in an airtight container in the fridge for up to 1 week. Freeze for up to 2 months.
Tip: For the best texture, avoid over-processing. For variety, coat some bites in coconut and others in finely chopped pistachios for a more refined presentation.
