Creamy Cashew Dill Dip is a fresh dip or spread that works beautifully with crackers, fresh bread, raw veggies, or as a flavorful layer in wraps and sandwiches. It’s quick to make, nourishing, and versatile.

Ingredients
1 cup raw cashews
½ cup soy yogurt (unsweetened, plain)
¼ to ½ cup fresh dill, chopped
2-3 tablespoons lemon juice
½ to 1 tsp salt according to taste
Preparation
Step 1 - Soak the Cashews
Place cashews in a bowl and cover with cold water. Soak for at least 2 hours, or use hot water and soak for 10–15 minutes for a quicker option. Drain and rinse well.
Step 2 - Blend the Base
Add soaked cashews, soy yogurt, lemon juice, and a pinch of salt into a high-speed blender or food processor. You can also add the dill stems if they are sufficiently tender.
Step 3 - Add Fresh Dill
Toss in the finely chopped dill and either blend again until smooth and creamy or keep it like this to feel better the texture of the dill.
Step 4 - Taste and Adjust
Adjust with extra lemon juice for brightness or more dill for stronger herbal notes.
Step 5 - Serve or Store
Transfer to a bowl and garnish with a few dill sprigs. Enjoy as a dip, spread, or sauce. Store in an airtight container in the fridge for up to 5 days.
Option: add 1-2 tbsp of nutritional yeast for a “cheesy” flavour.
