About the Recipe

Creamy Cashew Dill Dip is a fresh dip or spread that works beautifully with crackers, fresh bread, raw veggies, or as a flavorful layer in wraps and sandwiches. It’s quick to make, nourishing, and versatile.

Ingredients

  • 1 cup raw cashews

  • ½ cup soy yogurt (unsweetened, plain)

  • ¼ to ½ cup fresh dill, chopped

  • 2-3 tablespoons lemon juice

  • ½ to 1 tsp salt according to taste

Preparation

Step 1 - Soak the Cashews


  • Place cashews in a bowl and cover with cold water. Soak for at least 2 hours, or use hot water and soak for 10–15 minutes for a quicker option. Drain and rinse well.



Step 2 - Blend the Base


  • Add soaked cashews, soy yogurt, lemon juice, and a pinch of salt into a high-speed blender or food processor. You can also add the dill stems if they are sufficiently tender.



Step 3 - Add Fresh Dill


  • Toss in the finely chopped dill and either blend again until smooth and creamy or keep it like this to feel better the texture of the dill.



Step 4 - Taste and Adjust


  • Adjust with extra lemon juice for brightness or more dill for stronger herbal notes.



Step 5 - Serve or Store


  • Transfer to a bowl and garnish with a few dill sprigs. Enjoy as a dip, spread, or sauce. Store in an airtight container in the fridge for up to 5 days.



Option: add 1-2 tbsp of nutritional yeast for a “cheesy” flavour.
